Roasted Rainbow Carrots

Roasting vegetables is a simple, flavorful way to enhance their natural sweetness while preserving key nutrients. It also supports digestion, especially in cooler months, by softening tough fibers and enhancing nutrient absorption, making them easier for your body to break down and digest.

Ingredients:

  • 2 lbs organic rainbow carrots, peeled and trimmed

  • 1 tablespoon olive oil

  • 1 teaspoon organic fresh thyme, chopped

  • Salt and pepper to taste

  • Optional - 1 tablespoon of honey (for sweetness)

Directions:

  1. Preheat oven to 425 degrees.

  2. Peel and trim carrots

  3. Toss in olive oil and thyme

  4. Roast approximately 30 minutes, until tender. (turn once)
