Cashew & Coconut Energy Balls


Ingredients

  • 1 cup dates, pitted and cut

  • 1 cup organic raw cashews

  • 1 cup unsweetened coconut

  • 1/2 teaspoon alcohol free vanilla extract

  • 1/4 teaspoon fine sea salt

  • 2 tablespoons cashew butter (or almond butter)

  • 1 handful of Hu dark chocolate chips (optional)


Instructions

Add dates to a food processor and process until crumbly.

Add coconut, cashews, vanilla, and salt and process until again until well blended.

Add cashew butter and process until mixture starts forming a ball and easily crumps together when pinched.

Use 1 tablespoon measuring spoon or cookie scoop to roll the mixture into balls. Place them in an airtight container and chill for at least 1 hour. Then enjoy!
