Greek Summer Salad
Ingredients
1 Organic English Cucumber (sliced then cut in half)
8-10 oz of organic small tomatoes (cherry or mini heirlooms cut in half)
1 organic green bell peper (diced)
1 organic red bell pepper (diced)
1 small red onion (thinly sliced)
Handful of kalmata olives
7oz block of feta cheese (cut into cubes or crumble on top)
Dressing
1/4 cup cold pressed extra virgin olive oil
3 tablespoons red wine vinegar
1 garlic clove, minced
1/2 teaspoon dried oregano, plus more for sprinkling
1/4 teaspoon Dijon mustard
1/4 teaspoon salt
Freshly ground black pepper
Instructions
Place the cucumber, tomatoes, bell pepper, onion and olives in a large bowl
In a small bowl whisk together the olive oil, vinegar, garlic, oregano, mustard, salt and several grinds of black pepper.
Drizzle salad with the dressing. Use tongs to toss until well mixed. Top with feta blocks, dried oregano and serve!
